Candy sticks are made like any other candy by slowly crystallizing a sugar solution. In contrast to white candy, this is first heated with all brown candy varieties, to which the candy sticks belong. The heating results in the brown color and the typical caramel-like taste. Only then does the solution crystallize out, during which the crystals grow slowly. The special thing about the sticks of candy is that large crystals first grow on sticks held in the sugar solution, and only at the end of the manufacturing process does the product emerge in its familiar, chunky form, in which the grown crystals are knocked off the sticks. Hence it gets its name. Rock candy with its strong caramel flavor is often used for beneficial home remedies such as herbal teas or hot milk.
